Buckeye Quarry 4/26/15

We hit Buckeye Quarry one last time before they close it down before the big trout derby next Sunday. The bite was on fire when we started as we each landed 3 apiece and then the bite just completely died. Jeff landed his 4th keeper right before we called it a day. Jeff won this round of fishing as he pulled in a total of six to my three. We kept a total of seven between the two of us.
On the way home I stopped by Liberty to see if the bluegill would be hitting. Landed one nice bluegill and another dink that I threw back. Hopefully in the next few weeks they will be on the beds and then its go time.

Buckeye Quarry 4/25/15

Headed back over to the honey hole today but it seemed to have dried up. I didnt get a fish the first few hours that I was out this morning. After trying several other spots I found me a new honey hole. I caught a total of 14 trout in about an hour time span. Alot of them where smaller than the ones we had been catching but was still a blast pulling them in and turning them loose. Ended up keeping 4 nice ones and made a new friend that I turned on to using power bait and tight lining. Didnt take Larry very long to limit out once I showed him how to do it.

Another Day at the Honey Hole 4/24/15

Me and Jeff hit Buckeye Quarry again tonight after work. I got my first trout about 2 minutes after I put my bait out. Jeff was slaying them with a red dare devil and I was pulling them off the bottom with power bait. We both limited out fairly quickly and caught several more that we released. In all we got 11 fish and kept 8.

Creole Duck

Ingredients:
2 Tbsp. vegetable oil
2 c. boneless duck breast, skin removed; cut across the “grain” into 1-inch strips
3 Tbsp. Cajun spice
2 Tbsp. butter
1 c. celery, diced
1 c. yellow onion, diced
¾ c. green bell pepper, diced
½ tsp. Tabasco sauce
4 garlic cloves, minced
2 c. chicken stock or broth (or duck)
2 bay leaves
1 tsp. dried thyme leaves
1 tsp. dried basil leaves
1½ c. peeled and diced tomato, drained (canned O.K.)
⅔ c. canned tomato sauce
1 tsp. granulated sugar
4 cups cooked rice
Instructions:
Heat oil in a large skillet over medium-high heat. Season duck pieces with Cajun spice. Sear duck on both sides until well browned. Remove duck from skillet. Add butter, onion, celery and bell pepper to skillet and saute until vegetables are soft, about 4 minutes. Return duck to skillet and add Tabasco, garlic, chicken stock, bay leaves, thyme and basil. Simmer for 1 hour, covered. Add tomato, tomato sauce and sugar. Simmer until duck is tender and sauce has thickened. Serve over the rice.
