Green Turkey Chili

Ingredients:

1 medium onion, chopped
2 turkey thighs (1 lb. each), skin removed
1 can (15.5 oz.) white kidney
beans (cannellini beans), rinsed
1 can (11 oz.) corn, drained
1 1/2 cups medium green
tomatillo salsa
1 can (4.5 oz.) chopped green
chiles
2 tsp. minced garlic
1 1/2 tsp. ground cumin
1/2 tsp. salt
1/3 cup chopped cilantro

Serve with:

Sour cream, shredded Monterey Jack cheese

Directions:

1. Put turkey thighs on top of onion in a 3 1/2-qt. or larger slow cooker. Add beans and corn. Mix salsa, chiles, garlic, cumin and salt in a medium bowl; pour over top.
2. Cover and cook on low 8 to 10 hours until meat is tender. Transfer turkey to a cutting board. Pull off the meat from the bones and cut meat into bite-size pieces; discard bones.
3. Return meat to cooker; stir in cilantro.

Crawfish Chili

Ingredients:

2 lb Lean ground beef
2 lb Crawfish tails
1 ts Garlic, chopped fine
2 ts Salt
1 tb Soy sauce
1 ts Cayenne pepper
1 ts Dried mint
1 tb Dried parsley
3 tb Chili powder
1 can (8 oz) tomato sauce
1 cup Dry white wine
Water
1 ts Lemon or lime juice
1 cup Chopped onions
1 cup kidney beans
Bacon drippings

Directions:

Brown meat in bacon drippings. Combine all other ingredients with meat and bring to a boil. Simmer for a few hours.

Serve over rice

White Chicken Chili

Ingredients

3-4 chicken breasts (cut into bite size pieces)
1 onion (diced)
1 (14 oz) can of chicken broth
1 (14 oz) can of stewed tomatoes (don’t drain)
1 (14 oz) can diced tomatoes with green chilies (don’t drain)
1 teaspoon dried oregano
1/2 teaspoon ground coriander seed
1/2 teaspoon of red pepper flakes
1/4 teaspoon ground cumin
1 (15 oz) can white kidney beans (don?t drain)
1 (15 oz) can garbanzo beans (don?t drain)
Salt and fresh ground pepper to taste
Directions

Using a large slow cooker, add all ingredients and cook on high for 3 hours or on low for 8 hours.

Turkey Chili

Ingredients

1 1/2 pounds ground turkey
1 red pepper
1 green pepper
1 yellow onion
3 cloves garlic
1 tablespoon olive oil
3 cans reduced sodium tomato soup
1 can pink beans
2 1/2 tablespoons chili powder
2 tablespoons cayenne pepper
Salt and pepper to taste
Sour cream, cheddar cheese, green onions ? or other toppings of your choice
Directions

Finely dice peppers and onion. Add to a large pot with olive oil. Sauté until just cooked, about 6 minutes. Add turkey and brown completely. Drain off any excess fat. Add garlic and stir to combine. Next, add the soup, seasonings and beans along with 2 cans of water. Stir to combine completely. Simmer on low for 45 minutes with the cover on. Remove cover and cook an additional 20-30 minutes to thicken. Serve with cornbread and toppings of your choice.

Chili Mac

Ingredients

1 pound ground beef, cooked and drained
2 cans (16 oz each) hot chili beans, undrained
2 large green peppers, chopped
1 large onion, chopped
4 celery ribs, chopped
1 can (8 oz) tomato sauce
1 envelope chili seasoning
2 garlic cloves, minced
1 package (7 oz) elbow macaroni, cooked and drained
Salt and pepper to taste
Directions

In a slow cooker, combine the first eight ingredients. Cover and cook on low for 6 hours or until heated through. Stir in macaroni; mix well. Season with salt and pepper.
