Corn Flake Macaroons

Ingredients:

3 tablespoons butter, melted
1/4 cup brown sugar
1/4 cup granulated sugar
1 egg
1/4 cup nuts, chopped
1/4 cup coconut
2 1/2 cups corn flakes, slightly crushed

Directions:

Preheat oven to 350 degrees. Blend butter and sugars. Add egg and beat well. Carefully fold in nuts, coconut and corn flakes. Shape cookies using a tablespoon and pressing the filled spoon against the side of the bowl. Drop onto greased cookie sheet. Bake 10 minutes. Remove from pan to cool.

Pineapple Cookies

Ingredients:

1 1/2 cups sugar
1/2 cup butter
2 eggs, beaten
1 teaspoon vanilla
1 cup crushed pineapple, undrained
3 1/2 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup nuts (optional)
Powdered sugar

Directions

Preheat oven to 350 degrees. Cream together sugar and butter. Add eggs, vanilla and pineapple and continue to mix. Sift dry ingredients together and gradually add to creamed mixture. Stir in nuts. Drop by teaspoon onto greased cookie sheet. Bake 10 to 12 minutes. Mix remaining pineapple juice and powdered sugar to make an icing consistency. Ice cookies when cooled.
