Columbus Fishing Expo February 13th-15th

Just a little heads up to those of you that are really into fishing, the Columbus Fishing Expo this year will be held on Feb.13th-15th. Its a family-friendly event geared towards educating anglers of all ages and skill levels about the sport of fishing, visitors will be treated to a full schedule of seminars and demonstrations from some of the industry’s leading experts.
Headlining the show will be Dave Marciano, star of the hit reality show Wicked Tuna. Marciano is scheduled to speak to the crowd on Saturday and Sunday, and will be available to sign autographs for those in attendance.

Professional bass anglers from The Bass University will also be on hand throughout the Expo, demonstrating the hottest bass fishing techniques to the audience with the aid of The Hawg Trough, a portable 5,000 gallon aquarium that’s stocked with sport fish.

Other expo attractions include:
• Over 100 vendor booths on display. Vendors include fishing tackle, gear companies, fishing guides, outdoors outfitters and much more
• Local boat dealers will be showcasing their 2015 fishing boat inventory
• Daily seminars taught by professional bass, walleye, crappie, musky, perch, trout, catfish and carp anglers
• Visit the Ice Fish Ohio.com booth to check out the latest ice fishing gear and enter free drawings for product
• Fly fishing clinics taught daily, learn the new fly fishing technique called Tenkara presented by Mad River Outfitters with special fly tying instructional sessions available for attendees of all ages
• Instructional courses on how to use modern day electronics.

Tickets are $12 per day for adults age 18 and older, and can be purchased at the gate, or online for $10 by visiting www.columbusfishingexpo.com and all children age 17 and under who attend the Expo with a paying adult will receive FREE ADMISSION (limit two children per paying adult per day).

Cheesecake Stuffed Strawberries

Ingredients:

lb. fresh strawberries, rinsed and pat dry
8 oz. cream cheese, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
Graham cracker crumbs (optional)

 

Directions:

With a paring knife, cut off the strawberry stems. Cut around the inside of the strawberry, hollowing out slightly and creating a well for the cheesecake. (You can also do this with a small melon baller). Cut off a small portion of the pointy strawberry tip, so that each strawberry can stand. Place each on a large baking sheet.

In a medium bowl, with a standing or handheld electric mixer, beat cream cheese, sugar, and vanilla until fluffy, about 2 minutes on medium speed. Place mixture in a pastry bag and pipe into each strawberry, adding a little extra to the top. Refrigerate until thoroughly chilled.

Optionally, sprinkle graham cracker crumbs on top of each stuffed strawberry.

Dorito Chicken and Cheese Casserole

Ingredients:

3 cups cooked chicken, chopped
1 cup sour cream
1 can cream of chicken soup
1 can of corn, drained
1/4 cup minced onion
2 cups cheddar cheese, shredded
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. garlic powder
1 medium sized bag of nacho cheese Doritos, crushed

Directions:

Preheat oven to 350 degrees.

Lightly spray a 9×13 pan with cooking spray. Spread the bottom of the pan with half of the Doritos . Reserve one cup of cheese. Mix together remaining ingredients in a large bow. Pour chicken mixture over the Doritos. Top casserole with the remaining cheese and Doritos. Bake 30 minutes or until bubbly.

Fried Catfish (Texas Roadhouse)

Ingredients:

8 catfish fillets
2 cups buttermilk
5 1/2 cups cornmeal
2 tablespoons black pepper
2 tablespoons salt
Soybean or peanut oil for frying

 

 

 

Directions:

Thaw catfish fillets in the refrigerator. Skip this step if the catfish is fresh. Pour oil into a dutch oven or fryer. The oil should be two inches deep. Bring to a boil. It should be approximately 325 degrees. Combine pepper, salt and cornmeal in a bowl large enough for dredging catfish fillets. Pour buttermilk in a separate bowl. Dip catfish into buttermilk, making certain each side is covered. Press catfish into seasoned cornmeal mixture, then flip and coat the second side. Place catfish on a plate. Repeat dredging process with the remaining catfish fillets. Lower a breaded catfish fillet into hot oil with tongs. Cook each fillet for about 8 minutes, or until the catfish floats to the top and features a golden hue. Serve immediately.
