Basic Beer Batter

Here is a quick and easy recipe for a beer batter that i use and goes great with any fish.

Ingredients:

1 cup flour
3 T. olive oil
About a 1/2 a bottle of good beer (I use Bud Light)
1/2 t. salt
Oil for frying

Preparation:

Mix the flour, oil, salt and beer together in a bowl. Add the beer last and do it slowly, stirring all the time. You want enough beer in the batter to make it the consistency of pancake batter. Refrigerate for 10 to minutes.

Heat the oil to 350 degrees.

When the oil is hot, dredge the fish into the batter and let it get coated thickly. Gently place it in the oil and repeat.

Fry until the fish is golden brown, moving it around the oil so it does not stick anywhere. This take about 5-8 minutes.

Let the fish drain on a wire rack or paper towels.

Lima Lake 4/27/13

What a beautiful day today has been. Headed to Lima Lake and limited out on trout today in about 2 hours. The water was a little choppy and a cool wind was coming out of the east.

No luck with corn today but they were hitting minnows real good. Why i was out today the game warden got a few anglers for having to many trout. Limit is 5 a day.

Schoonover Lake 4/21/13

Had such a great day of fishing yesterday over at Schoonover Lake I decided to give it another try today. It started just like the day before as I got my 1st fish within 5 minutes of casting out. The next two I caught were small ones so I threw them back. Then it started to get crowded where I was at and the fishing slowed down for awhile. After about an hour you could see schools of trout swimming the bank line and I caught 2 more nice ones and then it got slow again. I caught one more little one before I called it a day. SO over all a pretty decent day with catching 6 total and keeping 3 and releasing 3.
