Bacon Wrapped Snapper Bites

Ingredients

1-2 large snapping turtles cleaned and quartered
1-2 large Sweet Onions
Salt/Pepper
2-3 packs bacon
3-4 cloves garlic
1 box toothpicks
3-4 celery stalks
Your favorite spice or meat seasoning

Lay the snapper quarters in a large soup pot and cover with water. Roughly chop the onion and celery and add that to the mix. Crush the 3-4 cloves of garlic and add them and then salt and pepper to your liking. Now boil the entire mix for 3-4 hours or until the meat is real tender. Dump the meat onto a large cookie sheet and let cool so that you can work with it. Go through the meat and tear the chunks off in quarter sized pieces so that you can roll them in the bacon later. Take your favorite spice or seasoning and mix it into the deboned meat and then proceed to wrap the quarter sized chunks of meat with half a strip of bacon and secure it with a toothpick.

Now fire up the grill and throw the bites on only long enough to crisp up the bacon and enjoy.
